Bourgogne Blanc

Vinification & maturing :

the harvest is sorted as soon as it arrives in the vat room and then pressed directly. The pressing is done on a long cycle and at low pressure for a quality must that is free of herbaceous extractions. Static settling is carried out for 24 hours. The wine is then aged in stainless steel vats for 10 months to keep the typicity and freshness of the Chardonnay.

Wine style :

very fresh aromas of pear and citrus fruit. A very fresh and tender mouth that slides towards a salty finish. To be drunk young (ageing potential: 3 years on average)

Food and wine pairing :

perfect with sushi, spring rolls, a summer salad or simply as an aperitif.

Crémant de Bourgogne

Grape variety :

Pinot Noir

Vinification & maturing :

the harvest is done manually in crates. Our Crémant is then made by a "champagnisateur", using the traditional method.

Wine style :

this blanc de noir has a fresh, floral nose. In the mouth, the bubbles are delicate and festive with great aromatic persistence.

Food and wine pairing :

ideal as an aperitif, with a sweet or savoury verrine or as a dessert.

Marsannay Blanc

Chardonnay

Vinification & maturing :

the harvest is sorted as soon as it arrives in the vat room and then pressed directly. The pressing is done on a long cycle and at low pressure for a quality must that is free of herbaceous extractions. Static settling is carried out for 24 hours. 50% in stainless steel vats, 50% in barrels – with 10% new barrels for the entire cuvée for 10 months –

Wine style :

the nose is fruity and reminiscent of white flesh fruits, in the mouth, the attack is ample with a nice length supported by a nice tension. On the finish, we find saline notes. Ageing potential: between 5 and 7 years.

Food and wine pairing :

this white Marsannay can be served as an aperitif and then served at the table throughout a meal.

Fixin Blanc

Vinification & maturing :

the harvest is meticulously sorted as soon as it arrives in the vat room and then pressed directly. The pressing is done on a long cycle and at low pressure for a quality must that is free of herbaceous extractions. Static settling is carried out for 24 hours. 100% in barrels, of which 20% are new.

Wine style :

the nose is quite intense, fruity and floral. The mouth is ample and straightforward with a finish of white fruit aromas such as pear. Ageing potential: between 5 and 7 years.

Food and wine pairing :

perfect with cheese, snails or fish cooked in sauce.

Marsannay Rosé

the harvest is sorted as soon as it arrives in the vat room before being pressed directly. The pressing is done on a long cycle and at low pressure for a quality must. Static settling is carried out for 24 hours. 100% in stainless steel tanks

Wine style :

the fruity nose leads to fresh strawberry notes. The mouth is fluid and accompanied by a nice freshness. A very fruity rosé to drink when young.

Food and wine pairing :

this Marsannay rosé can be served as an aperitif, with grilled meats, during a barbecue or a couscous perhaps.

Bourgogne Rouge “Cuvée de noble souche”

1.16 hectare

Vinification & maturing :

our Bourgogne Rouge is a blend of Pinot Noir from several old vines planted in Marsannay-la-Côte. The vines are on average over 60 years old and are planted on clay-limestone soils (of the pebble and alluvial cone type). The grapes are harvested by hand and sorted on arrival at the vat room. Then the harvest is completely destemmed before being put into vats. The vatting time is 17 days, with 5 days of pre-fermentation cold maceration (at 10°C). We only pump over during fermentation. The aim? To extract the intensity of the fruit, without having too much tannin. the wine is matured in stainless steel vats to preserve the freshness and finesse of the aromas.

Wine style :

a fruity and spicy nose, even peppery. The mouth has a nice suppleness to it and we find the crispness of the fruit. Whilst elegant in its early youth, this red Burgundy has a potential of 5 years of ageing.

Food and wine pairing :

its simplicity (in the good sense of the word) makes it a wine for "bon-vivants": open as an aperitif with a platter of cured meats, pasta or pizza.

Marsannay “Vieilles Vignes”

Vinification & maturing :

The Marsannay " Vieilles Vignes " is the result of a blend of different terroirs of the Marsannay appellation. The grapes come from vines that are over 40 years old. The grapes are harvested by hand and sorted on arrival at the vat room. The grapes are then 100% de-stemmed before being put into vats. After a pre-fermentation cold maceration of 4 to 5 days, reheating the vat activates the work of the indigenous yeasts for gentle alcoholic fermentation. Most of the wine is pumped over during fermentation to preserve the fruit and the freshness of the grape variety. 50% in vats and 50% in barrels. 10 months of maturation.

Wine style :

the nose presents aromas of red fruit jam (strawberries, raspberries), and a light vanilla note. The mouth is structured and persistent, with sustained fruity aromas. Ageing potential: 5 or even 7 years depending on the vintage.

Grilled red meat, cured meats

Marsannay “Clos de jeu”

Grape variety :

Pinot Noir

0.70 hectare

Vinification & maturing :

the harvest is done manually before being sorted. The grapes are then 100% de-stemmed before being put into vats. After a pre-fermentation cold maceration of about 7 days, reheating the vat activates the work of the indigenous yeasts for gentle alcoholic fermentation. Twice a day, we punch down the cap at the beginning of the alcoholic fermentation and about halfway through the pumping over. After fermentation, the grapes are pressed, then put into vats to be settled, before being put into barrels. Matured for one year 100% in barrels with 1/4 new barrels.

Wine style :

Ripe cherry (and almost the stone) on the nose. The mouth is supple, the tannins are delicate. The finish slips into delicately spicy notes. Ageing potential: between 10 and 15 years depending on the vintages.

perfect with meat in sauce or marinated meat (such as a curry or spicy dish), soft cheeses or a chocolate-based dessert.

Marsannay “Champ Salomon”

the fruity nose leads light red fruit jam notes. The mouth is generous and structured. Ageing potential: between 10 and 15 years depending on the vintage.

we recommend opening this Marsannay "Champ Salomon" 2 hours before tasting to let it aerate or to decant it to take advantage of all its potential. Its strength makes it the ideal partner for game, Indian cuisine and dark chocolate.

Marsannay “Boivin”

a very fruity nose with smoky notes. In the mouth, the attack is very supple with a slightly tauter finish and good length. Ageing potential: between 10 and 15 years depending on the vintage.

this Marsannay "Boivin" goes rather well with hard cheeses, accompanied by jam or onion confit, a country salad or roasted potatoes.

Marsannay “Grasses Têtes”

Gevrey-Chambertin

Chambolle-Musigny

the nose is delicate and reminiscent of stone fruits such as plums or damsons. The mouth is fluid and long, the finish reveals light vanilla notes. Ageing potential: about 15 years.

our Chambolle-Musigny is perfect with a pork tenderloin, slow-cooked lamb, or even a pot au feu.
